Balsamic Vinegar of Modena PGI is a gourmet excellence with unique characteristics.
It is obtained from an ancient recipe which involves the use of grape must, wine vinegar and a particular Modena dedication.

Acetaia Borgo Castello offers a complete line of products to honor "His Majesty" the Balsamic Vinegar of Modena PGI in all its facets: recipes developed ad hoc with different types and quantities of must and differentiated for every market need and taste.

Certified Talents! All our production of Balsamic Vinegar of Modena PGI follows the PGI production specification which include:

  • The use of cooked and/or concentrated grape must; wine vinegar aged up to ten years.

  • Musts obtained exclusively from the following vines: Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana and Montuni.

  • Aging in fine wood barrels: in our case only oak wood, for a minimum of 2 months (Aging), up to over 3 years (Aging).

The Balsamic Vinegar of Modena is naturally gluten-free, suitable for vegetarians and vegans. 

Acetaia Borgo Castello is also certified by BIOAGRICERT for the organic quality.
