Vincotto or Saba is a sweet dressing of the Emilian tradition that derives from the simple and slow reduction of grape juice until it reaches the consistency of a syrup, with a sweet and round taste, and with a dark and dense appearance like a glaze. It has a balanced sweet and sour flavor with velvety nuances of fruit. It is naturally rich in antioxidant polyphenols.

This dressing was already in use in these lands at the time of the ancient Romans and it is still widespread in southern Italy too.
