In our case, starting from studies and scientific research on the raw material (balsamic vinegar, dressings and glazes), these actions make it possible to develop a technological product innovation.

Quality control

Quality control represents the set of actions aimed at identifying and monitoring the quality standards of the products made.

This department carries out tests and systemic inspections on raw materials, processes and products, making use of specific tools or machinery. The entire production of our Acetaia follows the strict dictates of the Balsamic Vinegar of Modena IGP production specification. In order to obtain the PGI certification at the end of the aging cycle, Acetaia Borgo Castello guarantees all the standards required by CSQA and by the Consortium for the Protection of Balsamic Vinegar of Modena PGI.

To these are added the main certifications required on international markets to adapt to the various regulations and different food styles linked to different cultures and religions. Through an internal quality management system and paying constant attention to production standards, our Acetaia has obtained the highest food certifications required by national and international markets.
